If you are reading this article, you are probably a fan of the Meatloaf Princess channel and you have noticed all of my videos up until this point were about tofu meatloaves. I did that because tofu has no flavor so you can make tofu taste like whatever you want, which is perfect for sweet meatloaf creations. But I am not a vegetarian and sometimes you are craving for some meat to eat(hey, that rhymes!). Besides, you can make really good meatloaf using actual meat, provided you have all the spices right and what you put in the meatloaf actually will be compatible with the meat part of it(hint: beef has a very strong flavor, so if you put chocolate chips in a beef meatloaf, it's still going to taste like beef.) But I digress. The inspiration for my 11-spice chicken meatloaf is KFC(Kentucky Fried Chicken) chicken. Sort of. The official leaked spice recipe has Accent, which has MSG(monosodium glutamate) and I'm not a fan of MSG. I just found this particular spice blend by some random Internet citizen on a recipe sharing website I frequent. You may be asking, "Why make meatloaf taste like KFC chicken when you can get the real thing?" My response to that question would be, "1. I'm too lazy to wait in line at the drive-thru for it. And 2. I want to experiment with different meats and flavors- because I am the Meatloaf Princess. Duh!" Here's the recipe. Hint: 1 pinch of something = 1/16 teaspoon: For the pan, you will need: 1 lasagna pan Nonstick cooking spray For the meatloaf, you will need: 1/2 onion sauteed in olive oil 1 pound of ground chicken 2 eggs 1/2 cup of ketchup(because fried chicken goes well with ketchup) 1 cup of whole wheat breadcrumbs(my imitation of the "breading"; technically, you use flour to fry chicken, rather than breadcrumbs) Pinch of salt 1/2 tsp. garlic powder Pinch of oregano Pinch of sage Pinch of black pepper Pinch of celery salt 1/2 tsp onion powder Pinch of basil Pinch of chili powder Pinch of allspice Pinch of marjoram 1/2 tsp paprika 1. Wash your hands, especially when dealing with raw poultry. 2. Put all meatloaf ingredients in large bowl. 3. Mix the ingredients up until there is a nice, even consistency, especially with the eggs. 4. Spray lasagna pan with nonstick cooking spray. 5. Form two loaves in lasagna pan from meatloaf mixture. 6. Bake in oven at 350 degrees Fahrenheit until internal temperature of meatloaf is 170 degrees Fahrenheit. You can measure the internal temperature using a meat thermometer(it took an hour for my meatloaf to cook, but YMMV, depending on how thick your meatloaf is.) 7. Bon appetit!
