I noticed on the Internet that Avocado Toast has become very popular when it comes to food dishes, so being the Meatloaf Princess that I am, I decided to my take on this artisanal toast in the form of meatloaf. Instead of using actual toast, I used breadcrumbs instead. The breadcrumbs symbolize the "Toast" in "Avocado Toast".
For the cooking vessel, you will need: A lasagna pan Nonstick cooking spray For the actual meatloaf, you will need: 1/2 a sauteed onion(I sauteed my onion in olive oil; the choice of oil is yours) 2 beaten eggs 1 cup of whole wheat breadcrumbs 1 avocado, peeled and spooned out(Playing with the avocado pit is optional) Salt and pepper 1 pound of chopped, drained extra firm tofu 1. Wash your hands! :) 2. Put sauteed onion and beaten eggs in a large bowl. 3. Add rest of ingredients to the large bowl. 4. Mix the ingredients until the avocado is distributed evenly among the mixture(you may need to use your hands for this step to break the tofu and avocado into the smallest pieces possible). 5. Spray lasagna pan with nonstick cooking spray. 6. Form 2 loaves from the meatloaf mixture in the lasagna pan. 7. Bake in a 350 degree Fahrenheit preheated oven for 40-45 minutes. 8. Bon appetit!

I want to expand my culinary repretoire to beyond meatloaf. I'm talking about seven dishes I want to make this summer:
1. Bread 2. Macarons(the French type, not to be confused with macaroons) 3. Pop tarts 4. Cereal 5. Soup 6. Marshmallows 7. Fudge Of course, being the Meatloaf Princess, I will make these dishes only to incorporate them into my meatloaf recipes(and to eat too because what's the fun in cooking if you don't eat what you sow!? Eating the fruits of your labor is what makes cooking fun in my opinion). I put Pop Tarts in this meatloaf as a type of experiment to see if meatloaf would taste good if I put Pop Tarts in them. The Pop Tart meatloaf test passed with flying colors. Anyways, for your cooking vessel, you will need: A lasagna pan Nonstick cooking spray For the actual meatloaf, you will need: 1/2 a sauteed onion 2 beaten eggs 4 Wild Berry Pop Tarts crushed into small pieces Salt and black pepper 1 pound of chopped, drained, extra firm tofu 1. Wash your hands! :) 2. Put sauteed onions and beaten eggs in a large bowl. 3. Break 4 Wild Berry Pop Tarts into the smallest pieces you can. (Warning: this will get messy as the filling is very sticky. You might feel the need to lick your fingers when you're done, but if you do, please wash your hands again after doing so. End of Public Service Announcement) 4. Put Pop Tart pieces in large bowl. 5. Add salt, pepper, and tofu to large bowl. 6. Mix the ingredients in large bowl together. You can start using a large spoon, but the Pop Tarts are so thick that you'll eventually have to use your hands to mix the ingredients together. 7. Spray lasagna pan with nonstick cooking spray. 8. Form 2 loaves from the meatloaf mixture in the large bowl. 9. Bake in a 350 degree Fahrenheit oven for 40 minutes. 10. Bon appetit! Once I saw the movie trailer of the new movie "Inside Out"(http://movies.disney.com/inside-out/), my mind started thinking of how all the colorful emotions(they're characters) can be turned into some sort of meatloaf that represents each character with an ingredient that might evoke that particular emotion for me. For example, I get angry if I put chili powder in my mouth because it's very spicy. Plus the character Anger is red. Wasabi is disgusting(hence the character Disgust, who is green); I don't even know why it comes with sushi. They say it's a palate cleanser but all I get when I eat it is a burning mouth. Eww! Eggplant represents the character Fear(who is purple) because i was afraid when the eggplant was slipping and sliding all over the baking tray as I put it in a 400 degree Fahrenheit oven to bake. Blue corn taco shells represent the character Sadness because there are not many edible foods that are naturally blue, which make me sad. Some might even argue blue corn taco shells are actually purple. Tofu and dried blueberries represent Joy because with tofu, it brings me joy to know that no animals had to die for this meatloaf. The blueberries are sweet and counteract the chili powder and the wasabi. Blueberries also provide a sweet taste to the meatloaf. Yea, ketchup has nothing to do with the movie. But it does counteract the angry burning sensation in my mouth from the chili powder. For the cooking vessel, you will need: A lasagna pan Nonstick cooking spray For the actual meatloaf, you will need: You will need: 1/2 a sauteed onion 2 eggs 3 or 4 blue corn taco shells 1/2 teaspoon of chili powder 1/2 cup of ketchup 1 baked eggplant A pinch of wasabi vinaigrette or diluted wasabi. 1/2 cup of dried blueberries Salt and black pepper 1 pound of chopped & drained extra firm tofu 1. Wash your hands! :) 2. Put sauteed onion in a large bowl. 3. Beat and whisk 2 eggs. Put whisked eggs in large bowl. 4. Break blue corn taco shells into the smallest pieces possible. Then put crushed shells into large bowl. 5. Put chili powder and ketchup into large bowl. Eating the chili powder is optional. 6. Break the baked eggplant into the smallest pieces possible. You might get splashed with eggplant juice in the process and the skin may be hard to tear apart. Put eggplant pieces in large bowl. 7. Put last five ingredients in large bowl. 8. Mix the ingredients until the ingredients are distributed evenly among the meatloaf mixture. The eggplant may not mix very well in the mixture but do your best. 9. Spray lasagna pan with nonstick cooking spray. 10. Form two loaves in the lasagna pan using the meatloaf mixture. 11. Bake in 350 degree Fahrenheit oven for 40-45 minutes. 12. Bon Appetit! This is obviously not a meatloaf recipe, as you can tell by the picture above. It is however the preparation of an ingredient that will be used in my "Inside Out" Meatloaf. It's simple really. You will need: An eggplant A fork A knife Baking tray Nonstick cooking spray 1. Wash and dry the eggplant. 2. Cut the green stem of the eggplant off. 3. Poke holes in the eggplant on all sides of it using a fork. 4. Spray nonstick cooking spray onto the baking sheet. 5. Put the eggplant on the baking tray and bake it in a 400 degree Fahrenheit oven for 30 minutes. Be very careful as the eggplant might slip and slide due to the nonstick cooking spray on the baking sheet. 6. Bon appetit! Father's Day is coming up next week in the USA and my dad has been a big help to me in creating my videos for my channel. He's my cameraman and I love him very much. He is a traditionalist when it comes to meatloaf- he doesn't like meatloaf without any actual meat in it and most of my meatloaf creations are made with tofu, so this meatloaf is extra special. The meatloaf he likes has to be savory and not sweet. He actually ate it for dinner.
But that's not my only inspiration for this meatloaf. In case you haven't heard, Olive Garden just added two new menu items- they're both sandwiches in which the bread is the restaurant's famous breadsticks. Disclaimer and note: I am NOT sponsored by Olive Garden. One of the items is a breadstick meatball sandwich. I ordered some breadsticks over the Internet. In addition, I bought some butter spray and Olive Garden's garlic and herb seasoning at a local supermarket because Olive Garden's breadsticks are buttery and garlicky. I initially thought the white stuff on Olive Garden's meatballs in the sandwich was mozzarella cheese but when I read the actual description of this menu item, it turns out that it's actually Alfredo sauce. Why anyone would want a sandwich with Alfredo sauce AND tomato sauce on it is beyond my comprehension though. Besides, mozzarella is something my dad likes and this is a meatloaf for Father's Day after all. When all is said and done, the meatloaf probably didn't taste like the actual breadstick meatball sandwich at Olive Garden. Not that I actually tried it, although I would like to someday. I think the tomato sauce evaporated during the cooking of the meatloaf. :( But it was cheesy and slightly garlicky, but not enough of a garlic taste to repel the vampires from Twilight or even Dracula himself. :) For the cooking vessel, you will need: 1 Lasagna Pan Nonstick cooking spray For the actual meatloaf, you will need: 1/2 sauteed onion 2 beaten eggs 1/2 cup of mozzarella cheese 1/2 cup of tomato sauce 3/4 cup of crushed garlic breadsticks Garlic and herbs to taste Salt to taste Black pepper to taste Butter spray to taste 1 pound of 93% ground beef 1. Wash your hands. :) 2. Put the sauteed onion and beaten eggs into a large bowl. 3. Add the mozzarella cheese and tomato sauce to the mixture in the large bowl. 4. Crush some garlic breadsticks with your hands(or put them in a food processor) until you get 3/4 of a cup of that ingredient. 5. Put crushed garlic breadsticks in the mixture. 6. Add garlic, herbs, salt, and pepper to mixture. 7 Spray the mixture with some butter spray. 8. Add the ground beef. I tore the ground beef into smaller pieces and added those pieces into the mixture until the ground beef covered all the ingredients beneath it. Some people just put the entire pound of ground beef into the mixture but do what makes you happy. 9. Mix all the ingredients in the large bowl together until the ingredients are distributed evenly among the mixture. 10. Spray a lasagna pan with nonstick cooking spray. 11. Form two loaves from the meatloaf mixture. 12. Put in 350 degree Fahrenheit oven until the internal temperature of the ground beef is 165 degrees Fahrenheit. It took 65 minutes for that to happen for me, but YMMV(your mileage may vary; it's Internet slang. Get used to it.) 13. Bon appetit! You may be wondering why I called this meatloaf "French Toast Gone Wild". Well, to me the "Gone Wild" part means it's got every version I could find of a particular ingredient or dish. In this case, I was able to find frozen French Toast that can be cooked in a microwave, French Toast Crunch cereal, and 3 varieties of French Toast-flavored donuts that are limited edition at a local supermarket I shop at. It's also a reference to those explicit "Girls Gone Wild" videos from the '90s and 2000s. Because to me, my meatloaf has gone wild. And so have I apparently. Here's the recipe: For the cooking vessel, you will need: 1 Lasagna Pan Nonstick cooking spray For the actual meatloaf, you will need: 1/2 sauteed onion(I sauteed mine in olive oil but you could use other types of cooking oils) 2 beaten eggs 1/2 cup of ketchup(I was going to put 1/2 cup of maple syrup but I thought that would make the meatloaf taste too sweet). 1/4 cup of French Toast Crunch cereal 1 slice of French Toast(either microwaved from a frozen state or if you're adventurous, you could use your own homemade French Toast. But in my opinion, that's too much culinary effort to put in for just one ingredient in a meatloaf) 1 plain French Toast donut 1 powdered French Toast donut 1 cinnamon French Toast donut Cinnamon to taste Maple syrup to taste(to me, you can't have French Toast without cinnamon and maple syrup) Black pepper to taste Salt to taste 1 pound of chopped & drained extra firm tofu 1. Wash your hands. :) 2. Put first four ingredients in a large bowl. 3. Tear the donuts and French Toast slice into the smallest pieces possible(or you could use a food processor to do the job for you). 4. Put torn ingredients in the large bowl. 5. Add the last five ingredients in the large bowl. 6. Mix all the ingredients together using a large spoon. 7. Spray lasagna pan with nonstick cooking spray. 8. Form two loaves from the mixture. 9. Bake in oven at 350 degrees Fahrenheit for 40-45 minutes. 10. Bon appetit! I was going to make a meatloaf solely out of Red Velvet Oreo Cookies but I only had 9 and I figured out it takes 14 Oreos to make a meatloaf. Coincidentally, I had 5 S'mores Oreo Cookies left from one of the two boxes I had. Besides, the expiration date of the Red Velvet Oreo cookies was June 10th. You're probably not going to find Red Velvet Oreo cookies anymore since they were limited edition and initially released in February for Valentine's Day. Someday I will create another Red Velvet Meatloaf that doesn't use Oreo cookies of that particular flavor. Here's the recipe anyway: For the cooking vessel, you will need: 1 Lasagna Pan Nonstick cooking spray For the actual meatloaf, you will need: 1/2 a sauteed onion 2 beaten eggs 9 Red Velvet Oreo Cookies 5 S'mores Oreo Cookies(note: you probably shouldn't be putting Oreo cookies in your meatloaf if you are diabetic or sensitive to sugar. I'm just saying.) 1 pound of drained, chopped extra firm tofu Salt and pepper 1. Wash your hands! :) 2. Put first two ingredients in a large bowl. 3. Separate the cream and the cookie of each Oreo cookie. 4. Crush all the cookies into the smallest pieces you can manage or you can dump them in a food processor. 5. Put the cream and crushed cookies into the large bowl. 6. Add salt and pepper. 7. Mix all the ingredients until ideally, the cookies and cream are distributed evenly among the mixture. Since the cream is so thick, you probably will need to use your hands to mix all the ingredients if you want the cream to be distributed evenly in the meatloaf. 8. Spray lasagna pan with nonstick cooking spray. 9. Form two loaves from the mixture. 10. Bake in the oven at 350 degrees Fahrenheit for 40 minutes. 11. Bon appetit! The hype over S'mores Oreo Meatloaf on the Internet may have died down a bit, but hopefully this recipe will go viral. A girl can only dream, right? People on the Internet have complained this variety of Oreos doesn't taste that much like actual s'mores. Well, I have a solution: my S'mores Oreo Meatloaf. For the cooking vessel, you will need: 1 Lasagna Pan Nonstick cooking spray For the actual meatloaf, you will need: 1/2 a sauteed onion 2 beaten eggs 14 S'mores Oreo Cookies(note: you probably shouldn't be putting Oreo cookies in your meatloaf if you are diabetic or sensitive to sugar. I'm just saying.) 1 pound of drained, chopped extra firm tofu Salt and pepper 1. Wash your hands! :) 2. Put first two ingredients in a large bowl. 3. Separate the cream and the cookie of each Oreo cookie. 4. Crush all the cookies into the smallest pieces you can manage or you can dump them in a food processor. 5. Put the cream and crushed cookies into the large bowl. 6. Add salt and pepper. 7. Mix all the ingredients until ideally, the cookies and cream are distributed evenly among the mixture. My inspiration for this meatloaf was an anti-bullying commercial I saw in 2004 or 2005 about a kid with disabilities being bullied at lunch time because he liked to put Russian dressing on his pizza. I tried that myself at the time(I was in 8th grade then) and it tasted delicious, albeit it is unhealthy, given the fat content of Russian dressing. But YOLO(you only live once)! I remember telling my science teacher about my crazy combination and she thought it was disgusting. Like I said, I have a crazy good memory. This unusual combination is perfect for the drunchies and I would imagine it would be good stoner food(Note: I don't use marijuana and I only drink alcohol on the holidays). Here is the recipe: For the cooking vessel, you will need: 1 lasagna pan Nonstick cooking spray For the actual meatloaf, you will need: 1/2 a sauteed onion(I sauteed mine in olive oil but you could use whatever your little heart desires) 2 beaten eggs(I find that if you don't beat the eggs, then you will end up with some of the egg turning out to taste like an omelet. Not that that's a bad thing, but it kind of is if you don't want an omelet meatloaf) 1 cup of crushed pizza flavored goldfish 1/2 cup of Russian dressing 1 pound of extra firm tofu, drained and chopped Salt and black pepper 1. Wash your hands. :) 2. Put all meatloaf ingredients into a large bowl. 3. Mix all ingredients together until the sauce and goldfish are evenly distributed among the mixture. 4. Spray lasagna pan with nonstick cooking spray. 5. Form two loaves from the mixture. 6. Preheat oven at 350 degrees Fahrenheit and bake for 40-45 minutes. 7. Bon appetit! |
