This recipe was suggested to me a year or two ago by my great-aunt Krystal. I forgot to mention that in the video! Well, she suggested I make a cordon bleu to bring to one of the big family gatherings(Thanksgiving or Easter). I'm into meatloaf so this recipe is what would happen if a traditional meatloaf and chicken cordon bleu had a baby- really moist(!) chicken breasts stuffed with bacon, American cheese, ground beef, and meatloaf seasonings that are topped with a meatloaf-inspired sauce(a mixture of tomato sauce, ketchup, and Worcestershire sauce). This sounds like a complex recipe but it really isn't. It's kind of like making yourself a wrap that you have to bake in the oven in order to eat it fully cooked and not get salmonella. Surprisingly, the chicken breasts wrap pretty easily. I bought toothpicks and didn't need a single one! You may notice there's flour in the picture of the ingredients. It turns out I didn't need any. You see, my original plan was to batter the cordon bleus like fried chicken(with flour, eggs, and breadcrumbs). But it was a lot easier to just pour the whisked eggs on top of the cordon bleus and then dredge them in breadcrumbs. I haven't had a chicken cordon bleu since I was a kid and that was the frozen stuff we got at Costco(or as my mom used to call it- Price Club). I mainly tasted bacon, tomato sauce, and chicken with some ground beef and melted American cheese. My dad didn't try this recipe(on camera anyway) but my cousin Justin, who's a big foodie like myself and my cousin Max, did. He said the chicken wasn't dry at all and he could taste the meatloaf stuffing. This recipe got the literal thumbs-up from him! Makes 6 cordon bleus You will need: For the cooking equipment: A frying pan A spatula A medium bowl 2 lasagna pans Plates A small bowl A large bowl For the cordon bleus: 1 pound 90% ground beef Olive oil for frying 1/4 tsp.-1/2 tsp. meatloaf seasoning Pinch of cayenne pepper Pinch of salt Pinch of black pepper 6 thin, boneless chicken breasts 6 strips of maple brown sugar bacon 6 slices of American cheese French-fried onions(for crunchiness) 2 beaten and whisked eggs Breadcrumbs Tomato sauce Ketchup Dash of Worcestershire sauce 1. Pour olive oil into a frying pan and heat the oil up on the stove. Brown the ground beef in the frying pan until there's no more red meat. Reserve the ground beef in a medium bowl. 2. Mix the browned ground beef with the meatloaf seasoning, cayenne pepper, salt, and black pepper. Taste the beef to make sure the seasonings are to your liking. 3. Place each chicken breasts on plates and top them with bacon, cheese, browned and seasoned ground beef, and French-fried onions. Wrap the chicken breasts around the fillings. 4. Place the stuffed chicken breasts into a lasagna pan and pour the whisked egg over all of them. 5. Pour breadcrumbs into a small bowl and dredge the breasts in the breadcrumbs before transferring them to a second, clean lasagna pan. 6. In a large bowl, mix the tomato sauce, ketchup, and Worcestershire sauce together. Taste the sauce to make sure it's to your liking. Pour the sauce on top of the breaded chicken breasts. 7. Bake the cordon bleus in a 350 degree Fahrenheit oven for 35-40 minutes, or until the internal temperature of the chicken reaches 170 degrees Fahrenheit.

I can't believe Thaksgiving is less than a week away! To celebrate the upcoming holiday, I made a Thanksgiving(or Friendsgiving, whatever that is) double down sandwich with all the fixings of a glutinous Thanksgiving dinner. There's even an apple pie Oreo in it to represent dessert! So what exactly is a double down sandwich? It's a sandwich where instead of bread being used, it's some sort of animal protein, mainly fried chicken like in KFC's version. The fried chicken they used is almost flat like a burger, hence the use of the turkey burgers as the buns. Surprisingly, this sandwich held up quite nicely when it comes to the structural integrity of the sandwich(I'm sounding like a civil engineer here even though I'm not!). However, the sandwich is so unwieldy it's impossible to cut it in half or break apart a piece for someone like my dad to try, so he didn't try it. If you've followed this channel, you may have noticed I make something special every Thanksgiving- yea this isn't it, but I'll give you a hint about what it is: imagine meatloaf and chicken combined in some fashion(not talking about a chicken meatloaf)... You will need: Makes 1 sandwich For the cooking equipment: A George Foreman grill For the sandwich: 2 turkey burger patties Pumpkin spice cheese Stuffing Mashed sweet potatoes Cranberry sauce(preferably not the jelly kind, the one with the berries) Gravy French-fried onions(to represent green bean casserole) 1 apple pie Oreo cookie 1. Cook the turkey burger patties on a George Foreman grill for 5-7 minutes. 2. Place the larger of the 2 patties onto a plate, then top with in the following order: Pumpkin spice cheese Stuffing Mashed sweet potatoes Cranberry sauce(preferably not the jelly kind, the one with the berries) Gravy French-fried onions(to represent green bean casserole) 1 apple pie Oreo cookie 3. Cover the Oreo cookie with the other turkey burger patty. Up until this recipe, I've never had nor made egg drop soup in my life, much less one that tastes like cake batter a bit! Making egg drop soup is simpler than you think- you just boil some broth; add wine, sugar, and salt; then remove broth from heat & slowly stir the egg whites in, and add the chopped onions. Usually, I make enough soup or stew for 4 servings but I have a family gathering tomorrow in addition to filming another video tonight so I only made enough for 2 portions. I've made plenty of stews in the past but this is the first time I made soup, which differs from stew in that is less stuff in the dish. I think if I didn't add the birthday cake bites, the cake batter flavor would've been overpowered by the onion. My dad didn't try this recipe due to the wine in it. Pour the broth into a medium saucepot and bring the broth to a boil. Once the broth is boiling, add the next 3 ingredients and cook the mixture for 1 minute. 2. After 1 minute, turn the stove off and remove the saucepot from heat. Slowly stir in the egg whites. Then add the onion and birthday cake bites. Serve with wonton strips(optional). I love anything flavored, even egg whites, like from Muscle Egg(disclaimer: I'm NOT sponsored by them!). Last year, I made several birthday cake-themed recipes but this year, I'm going to do a couple of cake-batter themed recipes. The taste and smell of these egg whites is just like cake batter. Each single-sever bottle has the equivalent of 15 egg whites in it, plus it's pasteurized, so it's drinkable too, with 38 grams of protein per bottle!. Ok, enough evangelizing the product. Actually, speaking of egg whites, anything you can use plain 'ol eggs for, you can substitute egg whites in place of it, even noodles, though granted, the dough was very hard to knead and I assume that wouldn't be the case had I used actual eggs instead. I really should get a pasta maker because every time I make pasta or noodles from scratch, they end up thick and chewy. I've gotten used to the taste but my dad, not so much. You wouldn't know it from the video but my dad spit the noodle out off camera, saying it was too chewy. I wanted to taste cake batter in almost every bite so I put a birthday cake pop on top of the noodles. That way some of the frosting melts onto the noodles, thereby flavoring them. But dipping the noodles in some soy sauce really brings out the cake batter flavor too! HELPFUL LINK: Cake Batter Egg Whites: www.muscleegg.com/products/liquid-egg-whites/cake-batter/9-single-serve-bottles-cake-batter/ Makes 2-3 servings You will need: For the cooking equipment: A large bowl A rolling pin A knife 2-3 small bowls A large saucepot A slotted spoon For the noodles: 1 3/4 cups all-purpose flour, plus some more to coat your surface Little over 1 tsp. baking powder 1/2 cup cake batter egg whites(see HELPFUL LINK) 50-64 oz. vegetable broth Serve with birthday cake pops and soy sauce(highly recommended) 1. Put the first three ingredients inside a large bowl and mix all of them together until you get a dough. Knead the dough inside the bowl until all the crumbly dough becomes one dough ball. 2. Flour your surface and put the dough ball onto the surface. Knead the dough a little more until it's hard to knead. 3. Flatten the dough ball as much as possible using a rolling pin. Flour the rolling pin so no dough gets stuck on it. 4. Cut the flattened dough into strips with a knife. If the cut noodles are too thick, fold and flatten them with your fingers. Break apart the noodles in half if they are too long for your liking. Place all of the noodles on the rims of 2-3 small bowls. 5. Pour the vegetable broth inside a large saucepot and bring it to a boil. Once the broth is boiling, submerge the noodles into the broth. You might have to do multiple batches. Let the noodles cook in the broth for 5-10 minutes. After 5 minutes, take a noodle out, run it under cold water, and try to see if it's cooked enough. 6. Once the noodles are fully cooked, retrieve them with a slotted spoon and into a small bowl. If the noodles can't be retrieved with a slotted spoon because they're too long, just use a fork instead. 7. Top a bowl of noodles with a birthday cake pop and dip the noodles in soy sauce to really bring out that cake batter flavor. Last January at my local Toastmasters club holiday party, we ate at this upscale but forgettable Italian restaurant and one of the cocktails on their menu was a rainbow cookie(my favorite type of cookie) martini that I wanted to try but didn't because every ingredient in that drink had an alcoholic ingredient, including two types of vodka! Listen, I'll gladly cook with vodka but drinking it, not so much. I thought I could make a nonalcoholic version of this drink myself and I did! This was my first time making a cocktail- I even bought martini glasses that came with mixology equipment such as a cocktail shaker/strainer and peg measurer. Rimming a martini glass was easier than I thought too. I tasted a lot of cake, chocolate, and almonds in the martini. The fruit preserves, not so much, as they were strained out of the drink after it had been shaken. But nonetheless this was a really decadent, tasty martini! This obviously has chocolate in it, so my dad didn't try it. Birthday cake soda(see HELPFUL LINKS) 1 oz. Almond syrup(see HELPFUL LINKS) 1 oz. Apricot preserves 1 oz. Raspberry preserves 1/4 tsp. vanilla extract 1/4 tsp. half and half 1/4 tsp. cocoa powder 2 oz. water Chocolate syrup for rimming the martini glass Rainbow cookie for garnish 1. Measure each of the first 4 ingredients with a peg measurer(the bigger end equals 2 oz, the smaller one equals 1 oz.) and pour inside the bottle of a cocktail shaker. 2. Add the vanilla extract and half and half into the cocktail shaker. 3. In a water glass, miix the cocoa powder in water until you get a brown water and pour it into the cocktail shaker. 4. Put the lid, which is the cocktail strainer, on the bottle of a cocktail shaker and shake the bottle up. 5. Pour a circle of chocolate syrup in the inside of a large bowl. Rim the martini glass in it by turning the glass upside down and dipping it into the syrup. 6. Strain the mixture inside the bottle into the martini glass and the end result should be a brown-colored drink. Top the rim of the martini glass with a rainbow cookie. I always have to jump on the chance to make a meatloaf based off of pop culture, like last week's season 2 release of "Stranger Things" on Netflix. I'm not a fan of the show but when I read a listicle on either the Food Network or Tastemade(all I know was I read it on Snapchat), I wrote down in my phone all of the foods the character Eleven(yes, that's her name) likes and one of them is meatloaf! Eleven mostly likes junk food, so that's what most of the ingredients in this meatloaf are. The only ingredients that weren't on the listicle were salt, black pepper, and onion powder. Also, not including those 3 ingredients, there are 11 ingredients in this meatloaf! Sounds like an awesome video, right? Well I fucked up by accidentally deleting the video of me putting the meatloaf in the loaf pan. You see, I'm obsessed with keeping as much free space on my phone as possible, so I thought the video wasn't important and I deleted it. But not to worry, i improvised with pictures and emojis for that part of the recipe! On video, you might think I loved the meatloaf and I did, but I really should've mixed the meatloaf a bit longer, as I got big chunks of ground beef in some bites and the sweet stuff(mainly bananas, peanuts, raisins, and waffles) in others. I did learn from this recipe that frozen waffles disintegrate in the oven for being in there over an hour. It was interesting that the raisins from the trail mix expanded in size, but that's due to all the moisture surrounding it in the meatloaf. My dad didn't partake in this meatloaf, as it has chocolate in it. You will need: For the cooking equipment: A large bowl A loaf pan Nonstick cooking spray For the meatloaf: 2/3 tbsp. onion powder 2/3 cup unsweetened applesauce 1.75 oz. rainbow sprinkles(representing ice cream because we all know what happens to ice cream in the oven- spoiler alert, it melts!) 2.5 oz. trail mix 2 Nutty Buddy bars 1 banana 1/4 cup Coca-Cola 1/4 cup chocolate pudding 1/2 cup crushed potato chips 1/2 cup crushed mini Nilla wafers Pinch of salt Pinch of black pepper 1 lb. 93% ground beef 2 frozen Eggo waffles 1. Put the first 4 ingredients into the large bowl. Crumble up the Nutty Buddy bars and put them in the bowl as well. 2. Either chop up or crumble up a banana and put it in the large bowl, along with the next 8 ingredients. 3. Mix all the ingredients up until you get a firm meatloaf mixture. 4. Spray a loaf pan with nonstick cooking spray. Put half the meatloaf mixture into the loaf pan. Top that meatloaf mixture with the waffles and cover the waffles with the rest of the meatloaf mixture. 5. Bake the meatloaves in a 350 degree Fahrenheit oven for 60-65 minutes, or until the internal temperature of the meatloaf reaches at least 160 degrees Fahrenheit. |
