If you are reading this article, you are probably a fan of the Meatloaf Princess channel and you have noticed all of my videos up until this point were about tofu meatloaves. I did that because tofu has no flavor so you can make tofu taste like whatever you want, which is perfect for sweet meatloaf creations. But I am not a vegetarian and sometimes you are craving for some meat to eat(hey, that rhymes!). Besides, you can make really good meatloaf using actual meat, provided you have all the spices right and what you put in the meatloaf actually will be compatible with the meat part of it(hint: beef has a very strong flavor, so if you put chocolate chips in a beef meatloaf, it's still going to taste like beef.) But I digress. The inspiration for my 11-spice chicken meatloaf is KFC(Kentucky Fried Chicken) chicken. Sort of. The official leaked spice recipe has Accent, which has MSG(monosodium glutamate) and I'm not a fan of MSG. I just found this particular spice blend by some random Internet citizen on a recipe sharing website I frequent. You may be asking, "Why make meatloaf taste like KFC chicken when you can get the real thing?" My response to that question would be, "1. I'm too lazy to wait in line at the drive-thru for it. And 2. I want to experiment with different meats and flavors- because I am the Meatloaf Princess. Duh!" Here's the recipe. Hint: 1 pinch of something = 1/16 teaspoon: For the pan, you will need: 1 lasagna pan Nonstick cooking spray For the meatloaf, you will need: 1/2 onion sauteed in olive oil 1 pound of ground chicken 2 eggs 1/2 cup of ketchup(because fried chicken goes well with ketchup) 1 cup of whole wheat breadcrumbs(my imitation of the "breading"; technically, you use flour to fry chicken, rather than breadcrumbs) Pinch of salt 1/2 tsp. garlic powder Pinch of oregano Pinch of sage Pinch of black pepper Pinch of celery salt 1/2 tsp onion powder Pinch of basil Pinch of chili powder Pinch of allspice Pinch of marjoram 1/2 tsp paprika 1. Wash your hands, especially when dealing with raw poultry. 2. Put all meatloaf ingredients in large bowl. 3. Mix the ingredients up until there is a nice, even consistency, especially with the eggs. 4. Spray lasagna pan with nonstick cooking spray. 5. Form two loaves in lasagna pan from meatloaf mixture. 6. Bake in oven at 350 degrees Fahrenheit until internal temperature of meatloaf is 170 degrees Fahrenheit. You can measure the internal temperature using a meat thermometer(it took an hour for my meatloaf to cook, but YMMV, depending on how thick your meatloaf is.) 7. Bon appetit!

This year, there has been this fuss on the Internet to bring back one of my favorite cereals from the 1990s, French Toast Crunch. The Internet has gotten its wish and French Toast Crunch cereal made its return to supermarket shelves. I was fortunate enough to snag a box of this cereal. Of course, being the Meatloaf Princess, I wanted to put said cereal into a meatloaf. Thus French Toast Crunch Meatloaf was born. You will need: 1/2 onion, sauteed in olive oil 2 eggs(I didn't beat them this time) 1 cup of French Toast Crunch cereal 1/4 cup of ketchup Approximately 1 tablespoon of maple syrup(you can add more or less, depending on your mood for sweet things) About 1/4 teaspoon of cinnamon Pinch of salt 1 pound of extra firm tofu, chopped Nonstick cooking spray Lasagna pan 1. Wash your hands. 2. Put first 8 ingredients in large bowl. 3. Mix up the ingredients. 4. Spray nonstick cooking spray on lasagna pan. 5. Form two loaves from the mixture using hands 6. Bake in oven for 40-45 minutes at 350 degrees Fahrenheit. 7. Bon Appetit! This is my recipe for my French Fry Cookie Meatloaf. I came up with this idea from two foods I remembered eating in 2nd grade: french fries at the field trip to the Museum of Natural History and an activity my class did when we were learning about paleontology/dinosaurs. That activity involved each kid getting 1 chocolate chip cookie. Each kid had to "excavate" the cookie for chocolate chips. I remember finding 12 chips in my cookie, which is why I put 12 chocolate chips in this recipe. Fun fact: The kid with the most amount of chips in her cookie had 38 chips! I have a very good memory since that was in 1999. Anyways, enough reminiscing. Here's the recipe. You will need: 1/2 onion, sauteed in olive oil 2 eggs, beaten 1/2 cup of chopped French Fries(see Note on bottom) 1/2 cup of chopped Chocolate Chip Cookies(I used the Chips Ahoy brand; this is approximately 5 cookies) 12 chocolate chips(or how many you want in your meatloaf. The choice is yours.) Pinch of Black Pepper Pinch of Kosher Salt 1 pound of extra firm tofu, chopped Nonstick cooking spray 1 Lasagna Pan 1. Wash your hands. :) 2. Put first 8 ingredients in large bowl, except for the chocolate chips. 3. Mix ingredients in large bowl into mixture. Ideally, you want all the ingredients to be distributed evenly throughout the mixture. 4. Spray lasagna pan with nonstick cooking spray. 5. Form 2 loaves in the lasagna pan using your hands. 6. If you want, you can make a smiley face on your meatloaf using the chocolate chips. 7. After preheating your oven to 350 degrees Fahrenheit, put loaves in the oven for 40-45 minutes. 8. Bon appetit! Note: You should use French Fries that are already cooked but cooled down in a refrigerator. I put my fries in the fridge for an hour after they were done baking to make them have a soft "leftover" texture. Don't use raw French Fries in your meatloaf. Note 2: You probably shouldn't be putting chocolate chips or chocolate chip cookies in your meatloaf if you are diabetic or sensitive to sugar. This is my recipe for my Banana Curry Raisin Meatloaf. I got my inspiration for this recipe from food I remember having when I was in 7th grade. The banana muffin represents the first time I tried tofu. I put the tofu on a slice of banana bread for lunch and the other students thought I was weird. Sadly, I couldn't find banana bread in the supermarket and I was too lazy to make my own just for this meatloaf. The raisins represent the time I dragged my friends and mom to supermarkets all across the county just for "baking raisins", which are just raisins soaked in water that are more expensive than plain raisins. At the time, I was obsessed with getting my mom to make pancakes by putting ingredients like fruits or baking chips into the batter. Sadly, this obsession ended when she got sick from pancreatic cancer in my senior year of high school. Now I know today that plain raisins are sufficient for baking food. The curry powder represents the time I visited my dad's workplace, which is a local university that was later my alma mater. The university had an Asian restaurant on campus and that was the location of my first exposure to Indian food. I don't remember which type of curry I ate, except for two facts: 1. I didn't eat any white rice with the curry(they didn't have brown rice). 2. The curry was so spicy I had to drink 7 bottles of water to satisfy my burning mouth. Moral of the story: Always have rice or some sort of carbohydrate with curry. Anyways, enough reminiscing. Here is the recipe. You will need: 1/2 onion, sauteed in olive oil 2 eggs, beaten 1/3 cup raisins 1/2 cup of a crumbled up banana nut muffin(note: muffins vary in size but I used a pretty big muffin and only used half of the muffin itself) 1/2 cup of crumbled up Pizza Goldfish(approximately 100 goldfish) 1 tablespoon of curry powder Pinch of salt 1 pound of extra firm tofu, chopped Nonstick Cooking spray Lasagna Pan 1. Wash your hands. 2. Put first first 8 ingredients in large bowl. 3. Mix up the ingredients using a big spoon to get your meatloaf mixture. 4. Spray nonstick cooking spray onto lasagna pan. 5. Form two loaves from the meatloaf mixture on the lasagna pan. 6. Put in 350 degree Fahrenheit oven for 40-45 minutes. 7. Bon Appetit! One day I found a recipe for a 7-layer dip on one of my twitter feeds. I then thought to myself, "What if I turned that 7-layer dip into meatloaf?" Thus my 7-Layer Dip Meatloaf was born. Here's the recipe: You will need: 1/2 onion, sauteed in olive oil 2 eggs, beaten 1 cup of tortilla chips that has been crushed in a food processor(it's approximately 45 chips, but YMMV) 1 tbsp. olives, drained 1/4 cup of refried beans 1 tbsp. taco seasoning(or you could substitute that for chili pepper, cumin, paprika, and oregano)* 2/3 cup of Mexican cheese blend(or you could use a mixture of Monterrey Jack, Asadero, Cheddar, and Quesadilla cheeses, shredded) 3 tbsp. of sour cream 1/2 cup of mild guacamole 1/2 cup of mild salsa 1 pound of extra firm tofu that has been chopped Pinch of Salt(Not in video because i forgot) Nonstick cooking spray Lasagna Pan 1. Wash your hands! :) 2. Preheat your oven to 350 degrees Fahrenheit. 3. Add first 11 ingredients in large bowl. 4. Mix all of those ingredients together. 5. Spray nonstick cooking spray on lasagna pan. 6. Form two loaves in the lasagna pan, using your washed hands. 7. Cook in the oven for 40-45 minutes. 8. As promised in my "3rd Grade Scare Meatloaf" video, I will tell you about why said meatloaf is called that. When I was in 3rd grade in the year 2000(I sound and look younger than I actually look!), my class was learning about deserts. One of my classmate's parents brought "cactus cookies" into class on the last day of school. These cookies didn't have spinach in them, they had green food dye in them. I didn't put green food dye in my actual meatloaf because A) food dye is not natural and B) as far as I know, it is impossible to get green ketchup from putting green food dye into ketchup and mixing the two together. The spinach symbolizes the green color of the "cactus cookies". Like my meatloaf, these cookies had butterscotch chips(I don't think this would be allowed in school today since it has no nutritional value), peanuts(try bringing a cookie with peanuts today and you'll probably be banned from bringing your kids any more cookies to school! You know, peanut allergy fears), and chow mein noodles(ditto on the nutritional value and bringing them in school) in them. The scare part is when I came home from school. I told my mom, "Mommy, I brought cactus cookies!" She thought these cookies were actual cacti and had needles in them, so she said, "Don't eat that!" I then told her there weren't any needles in the cookies. The "needles" were actually the chow mein noodles. But she was so close to writing a note(you couldn't email or text teachers back then) to my teacher and complaining about the cookies. Anyways, story time is over and now I will show you how to make my "3rd Grade Scare Meatloaf". You will need: 1/2 onion, sauteed(I sauteed it in olive oil, as it is healthier, but it's up to you what oil to use) 2 eggs, beaten 1/2 cup ketchup 1/2 cup peanuts(Don't put this in your meatloaf if you or your family has a peanut allergy!) 1/2 cup butterscotch cookies(You shouldn't put this ingredient in the meatloaf if you are sensitive to sugar or are diabetic) 1/4 spinach 1 pound of extra firm tofu, chopped Pinch of salt Lasagna pan Nonstick cooking spray 1. Preheat oven to 350 degrees Fahrenheit. 2. Mix first 8 ingredients in large bowl. 3. Spray lasagna pan with nonstick cooking spray. 4. Form two loaves in the lasagna pan from the mixture. 5. Put in the oven for 40-45 minutes. 6. Bon Appetit! This is my recipe for my 2-Way Meatloaf. I call it my 2-Way Meatloaf because the 2 new ingredients, caramel and cheddar, are sweet and savory, respectfully. You will need: 1/2 onion, diced and sauteed 1/2 cup ketchup 2/3 cup of mild cheddar cheese, shredded 4 caramel cubes, each cut into 5 pieces Pinch of kosher salt 2 eggs, beaten 2 instant oatmeal packets(see instant oatmeal packets post) 1 pound of extra firm tofu 1 lasagna pan Nonstick cooking spray 1. Preheat oven to 350 degrees Fahrenheit. 2. Mix all ingredients, except for caramel, lasagna pan, and nonstick cooking spray, in large bowl. Make sure the ketchup and shredded cheese are evenly distributed among the mixture. 3. Spray lasagna pan with nonstick cooking spray. 4. Using washed, bare hands, form the mixture into two loaves in the lasagna pan. 5. Add the chopped caramel pieces into the loaves. 6. When oven is done preheating, place meatloaf in oven for 40-45 minutes. 7. Bon Appetit! Reflections: You should omit the caramel if you have diabetes or are sensitive to sugar. |
